Breakfast: Paleo blueberry Pancakes with coffee and almond milk

Lunch: strawberries and 1/2 banana

Dinner: Paleo meatloaf with organic mashed parsnips

Night Snack: Fruits

The Paleo Diary - Days 14 and 15

Day 14:

Breakfast: Paleo Pancakes with uncured organic bacon, strawberries, coffee with almond milk

Lunch: Nuts

Dinner: Paleo Chicken Piccata with organic broccoli

Night Snack: Apple

I am finally starting to feel 'sick' from the diet - they said it would happen. My body is missing all the extra sugar that I used to eat so now I feel like I have the flu (no energy, food has no taste etc).. Hopefully it will last for only a few days. Good news is I am clearly loosing weight! The scale tells me and people are telling me too. It feels great =)

Dinner: Roasted organic chicken drumet with organic baby carrots.

Day 11

Breakfast: Paleo Muffins with strawberries and 1/4 banana, coffee with almond milk

Lunch: Strawberries and Raspberries

Dinner: Paleo Cioppino

Night Snack: Apple

No pictures for day 11 because I pretty much had all my leftovers of my last meals. And they were still delicious! =)

Day 12

Breakfast: Paleo Muffins with uncured organic bacon, strawberries and 1/4 banana, with coffee and almond milk

Lunch: Pineapples and strawberries

Dinner: Organic chicken drumets (pan fried and oven roasted) with cauliflower and organic marinara sauce

Dinner was my Paleo version of chicken wings! They were pretty good but next time I will grill it instead (bbq style).. this is how we do it in Brazil and its very good!
After going to Crossfit 4 times this week I am taking today (saturday) off.
Believe it or not, I am enjoying the Paleo Diet Challenge!! It's so good to see the results! Good bye extra pounds! =)

The Paleo Diary - Day 10

Breakfast: Paleo Pancakes with organic uncured bacon and strawberries, topped with vegan/non-dairy butter and honey

Lunch: left-over from the pancake and strawberries

Dinner: Grass-fed ground beef with organic marinara sauce, sauteed onions/garlic, broccoli and carrots.

The Paleo Diary - Day 9

Breakfast: Paleo apple-cinnamon muffins with strawberries

Lunch: Fruits and more muffins (I just can't get enough lol)

Dinner: Paleo Cioppino (no potatoes, all natural/organic) - mussels, clams, shrimp, scallops and lobster in tomato/clam sauce with carrots, celery, garlic, shallots, basil, parsley, red chili flakes, olive oil, salt and pepper

Night Snack: Apple

I love my hubby!! He is making my Paleo diet way easier by coming up with amazing food ideas. However, Erin/Adam (from Crossfit and Riverhorse) inspired this one.

Breakfast: Paleo apple-cinnamon muffins with strawberries and a 1/4 banana + coffee with almond milk

Lunch: Pineapple with strawberries

Dinner: Almond flour crusted organic chicken and cauliflower, topped with organic marinara sauce

Night Snack: Clementines

I just cannot get enough of my paleo muffins <3 . This is my new favorite thing in the world! lol
I cooked for dinner a Paleo version of chicken parmesan (without cheese).. and it was very good!

The Paleo Diary - Day 7

Breakfast: Paleo Pancakes with strawberries, coffee with almond milk

Lunch: Strawberries and raspberries

Dinner: Grilled grass-fed filet with a organic baby carrots and roasted bell peppers.

Night Snack: strawberries and 1/4 banana

I tried one Paleo Pancakes recipe and they ended up not good at all! They didn't cooked well and tasted like dough, even cooking on medium heat (as said on the recipe). Oh well, lets try another recipe next time.

Dan rewarded me for my first week of Paleo and grilled a good grass-fed filet mignon. I have the best hubby =)

No picture today! I would post the picture of the pancakes but they didn't taste good. I will wait to post a picture of a pancake that I really like.

The Paleo Diary - Day 6

Breakfast: Paleo apple-cinnamon muffins with a side of 1/4 banana with strawberries, coffee with almond milk

Lunch: Strawberry, lettuce and olive oil salad, then chicken fajita, with a side of apples (chicken cooked in white wine and natural orange juice)

Dinner: Almond flour crusted chicken with broccoli.

Night Snack: strawberries with 1/4 banana.

Today was my first day at the restaurant after starting the Paleo. I brought my homemade Paleo muffins and some fruit for breakfast and also some of my almond milk. Lunch was hard because everybody had amazing Chimichanga's, while I only had a salad. So an hour later I was starving to death, but a nice guy who works in the kitchen made fajitas for me. Good thing today is my last day at the resort - I don't work until this Winter!
I ran out of my Paleo Muffins!! I have to bake more of them!! =)

The Paleo Diary - Day 5

Breakfast: Paleo apple-cinnamon muffins with a side of strawberries and 1/4 banana

Lunch: Unsalted almonds

Dinner: Ground Beef Tacos: Grass-fed ground beef in butter lettuce, topped with homemade pico de gallo and organic baby carrots.

Night Snack: Apple

Today was a day to finish my left-overs. They were still so good! I am bringing my two last muffins to work tomorrow. It will be my first day working in the restaurant since I started the diet.. wish me luck!!
